- 1 cup tomato or pizza sauce
- 1/2 cup BBQ sauce
- 1 pound low-moisture mozzarella, thinly sliced or shredded
- 1 chicken breast, cooked and chopped into bite-size pieces
- Flour for rolling out dough
- Chopped cilantro and green onions, to garnish
- Optional topping: Sliced fresh tomatoes and caramelized onions
Directions:
- Preheat oven to 425°F. If you have a baking stone, place it in the oven to pre-heat.
- Using flour as needed, roll out one ball of pizza dough until thin (thin enough so the dough isnt in danger of tearing), about 12 inches across. Transfer the dough to a sheet pan or hot baking stone.
- Spoon 1/2 cup tomato sauce and 1/4 cup BBQ sauce onto dough.
- Add half of the sliced mozzarella and half of the chopped chicken.
- Bake for 10 to 15 minutes, or until dough is crisp and cheese is melted. Repeat with remaining dough for second pizza, or bake the pizzas side-by-side if your oven is big enough.
- Garnish pizzas with cilantro and green onions, and serve while hot.

CLASSIC MARGHERITA PIZZA RECIPE
Ingredients:
- 1 pound pizza dough, store bought or homemade
- 1 pound (2 large) ripe summer tomatoes or 1 16-oz can whole or diced tomatoes
- 1 clove garlic
- 1/4 cup loosely packed basil, sliced into ribbons
- 8 ounces mozzarella cheese, sliced
- Salt and pepper
Directions:
- Heat the oven to 550°F or as hot as it can go. Place a baking stone or baking sheet in the oven as it heats.
- Divide the dough in half and shape each half into 10" rounds. Set aside.
- Cut the tomatoes into wedges and trim away the stem area. Gently squeeze the wedges over a bowl to remove the excess juices and seeds. Combine the tomatoes with the garlic and half of the basil in the bowl of a food processor or blender. Process until the tomatoes break down into a sauce, scraping down the sides as needed. If desired, strain to make a thicker sauce.
- Spread a light layer of the sauce over one of the rounds of pizza. Top with half of the slices of mozzarella. Leave some space between the pieces of mozzarella.
- Transfer the pizzas to the preheated baking stone or baking sheet. Bake for 5-10 minutes, exact cooking time will vary depending on your oven temperature. Pizzas are finished when the crust is deep brown with charred spots and the cheese is bubbling.
- Top and bake the second pizza. Sprinkle each pizza with basil as it comes out of the oven.

MEXICAN PIZZA RECIPE
Ingredients:
- 1 cup canned black beans, rinsed
- 1/2 cup coarsely chopped jarred roasted red peppers
- 1 garlic clove
- 1 tablespoon chili powder
- Kosher salt
- 1 pound whole-wheat pizza dough
- Cornmeal, for dusting
- 1 cup shredded low-fat Monterey Jack cheese (3 ounces)
- 1/2 cup grape tomatoes, halved
- 1/4 cup pitted black olives, sliced
- 1 scallion, thinly sliced
- 1 cup shredded butter lettuce
- 3 tablespoons reduced-fat sour cream
Directions:
- Set a pizza stone on the bottom of the oven and preheat the oven to 450°. In a food processor, combine the black beans with the roasted red peppers, garlic clove and chili powder and puree until smooth. Season with salt.
- Stretch the pizza dough to a 12-inch round and transfer to a cornmeal-dusted pizza peel. Spread the black-bean puree on top, leaving a 1/2-inch border. Sprinkle with the cheese, tomatoes, olives and scallion.
- Slide the pizza onto the preheated stone and bake for 12 minutes, until the bottom is crisp and the cheese is bubbling. Transfer the pizza to a work surface and top with the lettuce and dollops of the sour cream. Cut into 4 or 6 wedges and serve at once.
